Khachapuri with kefir – Georgian cheese bread

Ingredients for 1 servings:

  • 300 ml kefir
  • 1 egg(s)
  • 1 tsp salt
  • 1 tsp sugar
  • 3 tbsp oil
  • 400 g flour
  • 1 tsp baking powder
  • 350 g feta cheese, shepherd’s cheese or similar
  • 1 egg(s)
  • some butter for spreading

Instructions

Working time approx. 45 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 5 minutes

In a bowl, whisk together the kefir, egg, salt, sugar, and oil. Gradually add the flour and baking powder. Knead into a dough and let it rest for 15 minutes. For the filling, grate the cheese into a bowl, add 1 egg, and mix well. After 15 minutes, divide the dough into 5 pieces. Roll each piece out into a thin, round flatbread. Place some filling in the center. Fold the edges toward the center to completely cover the filling, like a sack. Roll over the dough once with a rolling pin, then pierce with a fork. Fry in a pan until golden brown on both sides. Brush with butter to finish. Khachapuri taste best when eaten warm.
