King Prawns with Spiced Rice

Ingredients
 

  • 500 gr Raw king prawns, possibly peeled to the tip of the tail
  • 3 piece Shallots
  • 2 piece Garlic cloves
  • 3400 gr Leek
  • 2 Poles Celery
  • 200 GR Wild rice
  • 20 gr Clarified butter
  • 2 tbsp Tomato paste
  • 1,5 tsp Ground cumin
  • 600 gr Tomatoes
  • 1 bunch Flat leaf parsley
  • 0,5 bunch Fresh coriander
  • Salt pepper

Instructions
 

  • Cut the shrimp on the back, remove the black intestinal thread in each case. Rinse the shrimp. Peel shallots and garlic. Slice the shallots, slice the garlic, rinse the leeks and celery, cut the leek into rings. Cut the celery into thin slices.
  • Wash the rice, heat the lard in a saucepan, fry the prawns in it, remove them. Sauté shallots, garlic, celery and leeks in the fat for about 3 minutes. Stir in tomato paste, spices. Add the rice and 500 ml of water. Cover and cook rice over low heat for 10 minutes.
  • Place tomatoes in boiling water for 30 seconds, peel them, cut into wedges. Cut the herb leaves from the stalk into strips, add the tomatoes, half of the herbs and prawns to the rice, heat. Salt, pepper and mix with the rest of the herbs.
