Kiwi pancakes

Ingredients for 4 servings:

  • 150 g flour
  • 250 ml milk
  • 2 eggs
  • 3 tbsp sugar
  • 4 tsp oil
  • 6 kiwis
  • 3 tbsp honey
  • 175 g cream cheese, reduced fat
  • mint

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Whisk together flour, milk, eggs, 2 tablespoons of sugar, and 2 teaspoons of oil until smooth. Let the batter rise for about 5 minutes. Fry the batter in batches in the remaining heated oil to make 4 pancakes and keep warm. Peel and slice the kiwi, and heat briefly in the pan. Add honey and toss the kiwi slices in it. Mix the cream cheese with the remaining sugar and 2 tablespoons of water. Spread the cream over the pancakes, fold them up, and serve with the kiwi. Garnish with mint, if desired.
