Ingredients for 1 servings:

  • 250 g butter or margarine, soft
  • 200 g sugar
  • 1 packet of vanilla sugar
  • 1 bottle of butter-vanilla flavoring
  • 6 eggs
  • 250 g flour
  • ½ tsp baking powder
  • Fat, for the shape
  • 250 ml coffee, hot
  • 3 tbsp sugar
  • 2 tbsp cocoa powder
  • 1 tbsp rum
  • 1 tbsp sugar
  • 2 cups whipped cream
  • 2 packs of cream
  • 75 ml egg liqueur
  • 50 g desiccated coconut
  • Cocoa powder

You will need a thick knitting needle or a thick wooden skewer. Dough: Whisk together the fat, sugar, vanilla sugar, and flavoring until creamy. Stir in the eggs one at a time. Mix the flour and baking powder and stir in. Pour the batter into a greased 26 cm springform pan. Bake in a preheated oven (175°C for electric ovens, 150°C for fan ovens) for about 45 minutes. Glaze: Whisk together the coffee, sugar, cocoa, and rum. Immediately pierce the hot cake in the pan several times with the knitting needle. Pour the hot coffee mixture over and into the holes. Don’t worry, the cake won’t get soggy. Let the cake stand overnight in the pan. Remove from the pan the next day. Whip the cream with cream stabilizer until stiff peaks form, adding 1 tablespoon of sugar as you go. Fold in the eggnog. Spread the eggnog cream over the cake. Sprinkle the outer edge with grated chocolate and dust the center with a little cocoa.
