Kohlrabi Carrot Towers with Ruccula Puree

- 2 Kohlrabi fresh
- Baby carrots
- 4 size Potato
- 1 bunch Ruccula
- 200 ml Milk
- 200 ml Creme fraiche Cheese
- Oil for frying
- Salt, pepper and chilli
- Lemon zest from 1 lemon
- Kohlrabi with a slicer in approx. 4 mm. Cut slices, cook baby carrots with kohlrabi al dente, fry rocket in hot fat, allow to cool and chop finely .. Boil potatoes and process into puree. Work the ruccula under the puree. Season the creme fraiche with salt, pepper, chilli and lemon zest. Cut out the kohlrabi with the dessert ring, fill the puree in piping bags and arrange in layers. Season the creme fraich with salt, pepper, chilli, lemon zest and a little honey.
