Kohlrabi with Sausage and Potato Snow!

  • 1 Pc. Butter
  • 1 Pc. Diced onion
  • 1 tablespoon Flour
  • 1 shot Water
  • 1 Jug Coffee cream 12%
  • 1 pinch Freshly grated nutmeg
  • 1 teaspoon Coarse salt
  • 1 pinch Black pepper from the mill
  • 2 tablespoon Freshly chopped chives
  • 3 Pc. Bratwurst fine
  • 3 Pc. Clarified butter
  • 6 Pc. Peeled waxy potatoes
  • 1 liter Salted water
  • 1 Pc. Potato press
  • 1 Pc. Butter
  • 3 Pc. Rusk crumbs

Vegetables :

  1. Peel the kohlrabi into sticks, blanch.
  2. Make the light basic sauce, add the kohlrabi, season, refine with chives.
