Kohlrabi with Sausage and Potato Snow!
The perfect kohlrabi with sausage and potato snow! recipe with a picture and simple step-by-step instructions.
for the snow!
- 1 Pc. Butter
- 1 Pc. Diced onion
- 1 tablespoon Flour
- 1 shot Water
- 1 Jug Coffee cream 12%
- 1 pinch Freshly grated nutmeg
- 1 teaspoon Coarse salt
- 1 pinch Black pepper from the mill
- 2 tablespoon Freshly chopped chives
- 3 Pc. Bratwurst fine
- 3 Pc. Clarified butter
- 6 Pc. Peeled waxy potatoes
- 1 liter Salted water
- 1 Pc. Potato press
- 1 Pc. Butter
- 3 Pc. Rusk crumbs
Vegetables :
- Peel the kohlrabi into sticks, blanch.
- Make the light basic sauce, add the kohlrabi, season, refine with chives.
Garnish :
- Cut the potato into pieces, cook in salted water, drain, press through the press.
Bratwurst :
- Cook slowly in hot clarified butter (medium temperature), the sausage must not burst.
- Heat the butter and brown the crumbs (rusks) a little. Spread around the potato snow.
