Kumquat-Grapefruit Jam

Ingredients for 1 servings:

  • 200 g kumquat(s)
  • 1 grapefruit(s)
  • 5 oranges
  • 500 g gelling sugar, 2:1
  • 5 tbsp lemon juice, or 1 sachet citric acid

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

Wash and prepare the fruit. Cut the kumquats in half so the seeds are easier to remove. Then chop the fruit into small pieces. Fillet the grapefruit with a sharp, pointed knife (you will need 2-3 fillets), reserving the juice. Squeeze the oranges. Place the fruit and the orange/grapefruit juice in a tall saucepan. Stir in the gelling sugar, add the lemon juice, and bring to a boil. Cook the jam according to the package instructions until it sets. Place a porcelain jam spoon in the refrigerator before beginning to test for settling. If the cooked jam doesn’t run from the spoon, pour it into clean, hot-rinsed twist-off jars.
