Kumquats in white rum

Ingredients for 1 servings:

  • 1 kg kumquat(s)
  • 950 g sugar
  • 500 ml water
  • 700 ml white rum

Instructions

Wash the kumquats and dry them with a kitchen towel. Pierce each fruit all over with a toothpick. Heat the sugar in the water and boil gently for 10 minutes. Add the fruit to the hot sugar solution and simmer gently for 5 minutes. Remove the pot from the heat and let the kumquats cool in the solution. Drain the fruit well and layer them tightly in jars and pour enough rum over them to completely cover them. Let them steep in a cool, dark place for 4-5 weeks before consuming.
