Ingredients for 5 servings:

  • 250 g kadayif dough strands
  • 100 g clarified butter
  • 2 tsp grape syrup
  • 250g mozzarella
  • n. B. Clarified butter for the molds
  • e.g. chopped pistachios for decoration
  • 1 cup sugar
  • 1 cup water
  • 1 tbsp lemon juice

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Prepare the sugar syrup by putting water and sugar in a saucepan, bringing to a boil, and simmering for about 10 minutes. Then add lemon juice and simmer for another 5 to 10 minutes. Then let it cool completely. Cut the dough strands into small pieces and place them in a bowl. Add melted clarified butter and grape syrup and knead well with your hands. Generously grease kadayif molds with clarified butter and spread a first layer of dough strands on top. Using a second bowl, press the dough strands firmly down, spread the mozzarella on top, and add another layer of dough strands on top. Press firmly down again. Prepare 5 bowls in this way for the specified quantities. Then grease 5 more bowls with clarified butter, as the kadayif will be turned over during frying. Fry the kadayifs over medium heat on the stovetop (preferably a gas stove) until golden brown on one side, then turn them over onto an empty bowl and fry the other side until golden brown. Pour half a ladle of cold sugar syrup over the finished kunefe and garnish with pistachios. Serve immediately while hot.
