Lamb's lettuce with bacon dressing

Ingredients for 4 servings:

  • 200 g potato(s), floury
  • 1 kg lamb’s lettuce
  • 1 large onion(s)
  • 200 g bacon, streaky
  • some water, hot
  • some oil, neutral
  • 1 bunch of parsley
  • 1 bunch of chives
  • some vinegar (wine)
  • Salt
  • pepper
  • Sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Rhenish

Wash, peel, and dice the potatoes, then cook in salted water until tender. Meanwhile, trim and wash the lamb’s lettuce and place it in a bowl. Peel and finely dice the onion. Finely dice the bacon. Wash and finely chop the parsley and chives. Drain the potatoes and mash them. Add water and stir to create a creamy, slightly runny sauce. Add the bacon, onions, and herbs. Season to taste with salt, pepper, vinegar, and sugar. Drizzle the warm dressing over the salad.
