Lamb's lettuce with caramelized apple slices

Ingredients for 4 servings:

  • 200 g lamb’s lettuce
  • 30 g walnuts
  • 70 g raw ham, thinly sliced
  • 1 apple, red
  • 1 tbsp sugar
  • 2 tbsp raspberries, frozen
  • 1 shallot(s)
  • 1 tbsp honey
  • 2 tbsp vinegar (raspberry vinegar)
  • salt and pepper
  • 3 tbsp oil (walnut oil)

delicious as a starter

Clean, wash, and spin dry the lamb’s lettuce. Roast the walnuts in a pan without fat. Fry the ham in a pan until crispy and drain on kitchen paper. Wash the apple, core it with an apple corer, and slice it. Fry on both sides in the frying fat. Sprinkle with the sugar and let it caramelize slightly. Defrost the raspberries. Finely chop the shallot. For the dressing, mix the honey, raspberry vinegar, salt, and pepper well. Whisk in the walnut oil in a thin stream. Stir in the raspberries and shallots. Place the lamb’s lettuce in a bowl and toss with the vinaigrette. Arrange on plates and serve with the apple slices, walnuts, and ham.
