Lamb’s Lettuce with Cherry Tomatoes, Raspberries, Feta and Roasted Pine Nuts
The perfect lamb’s lettuce with cherry tomatoes, raspberries, feta and roasted pine nuts recipe with a picture and simple step-by-step instructions.
For the salad:
- 1 packet Lamb’S lettuce
- 500 g Cherry tomatoes
- 250 g Raspberries
- 1 Pc. Feta
- 2 Pc. Shallots
For the vinaigrette:
- 5 tbsp Olive oil
- 2 tbsp Honey
- 1 tbsp Mustard
- 4 tbsp Balsamic vinegar
- Salt and pepper
- Fresh dill
- 2 Pc. Garlic cloves
For the vinaigrette:
- Put all the ingredients together in a bowl and stir vigorously.
For the salad:
- Wash all vegetables thoroughly and cut into small pieces. Wash the raspberries too. Finely dice the shallots. Put everything together in a large bowl and mix. Toast the pine nuts in a coated pan.
- To serve, put the salad on the plate first. Then put some raspberries on top and crumble some feta over them. Finally add the roasted, still warm pine nuts and spread some sauce on top.
