Ingredients for 2 servings:
- 2 handfuls of lamb’s lettuce
- ¼ large mango(s)
- 4 tbsp currants
- 4 tbsp pine nuts, roasted
- 4 tbsp yogurt
- 4 tbsp cream cheese
- 2 tbsp vinegar (blackcurrant vinegar)
- salt and pepper
- Herbs
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Clean and wash the lamb’s lettuce. Peel and dice the mango. De-stalk and wash the currants. Mix the dressing together and season to taste. Place the lamb’s lettuce, mango, and currants in bowls or on plates. Pour the dressing over the salad and sprinkle with the pine nuts.
