fruity, fresh, goes well with many main dishes, refined and quick to prepare

Sort the lamb’s lettuce and wash thoroughly, drain, then place it in a sufficiently large bowl. Finely chop the spring onion and add it to the salad. Peel and fillet the orange, and add it to the salad in small pieces. Finally, finely chop the walnuts and sprinkle over the salad. Season with salt and pepper. Combine the oil, vinegar, honey, and orange juice in a sealable container and shake vigorously. Just before serving (otherwise everything will collapse so quickly!), pour over the salad and toss well. Goes well with meat, fish, and pasta; it can be used as a starter or side dish.
