Lamb's lettuce with passion fruit dressing

Ingredients for 2 servings:

  • 2 handfuls of lamb’s lettuce
  • 2 passion fruits
  • 2 tbsp water or lemon juice
  • 2 tbsp lemon juice
  • 2 tbsp walnut oil
  • salt and pepper
  • Coconut blossom sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Trim and wash the lamb’s lettuce, drain, and place it on a plate. Divide the passion fruit into wedges and scoop out the seeds. If you like, remove the seeds; I leave them in. Mix the flesh with the remaining dressing ingredients and season to taste. Serve the dressing with the salad.
