Ingredients for 4 servings:
- 200 ml white wine
- 250 ml water
- 125 g sugar
- 7 sprig(s) lavender
- 2 limes
- 1 egg white

Heat the wine, water, and sugar to 90 degrees Celsius. Then add the cut heads of the lavender sprigs, place everything in a cold bowl, and let it cool to about 30 degrees Celsius. Zest the limes and juice the fruit. Add both to the lavender wine and pour everything through a sieve. Place in the freezer for about 1 hour to pre-freeze. Stir with a spoon every 15 minutes. Then beat the egg whites until stiff and fold in. Place the mixture in the ice cream maker for 30 minutes. Then let it freeze in the freezer for about 1 hour. Portion out and serve with lavender blossoms.
