Lebanese salad with bread pieces

Ingredients for 8 servings:

  • 2 cucumbers
  • 700 g tomatoes
  • 2 bunches of parsley
  • 1 bunch of mint
  • 1 bunch lamb’s lettuce, purslane or other leaf lettuce of your choice
  • 1 onion(s)
  • 2 cloves garlic
  • 2 tsp thyme
  • 5 tbsp lemon juice
  • 6 tbsp olive oil
  • Salt
  • e.g. white bread, diced, toasted

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Fattouche

Wash the parsley, mint, and purslane and pluck the leaves from the stems. Peel, halve, deseed, and slice the cucumbers. Peel, deseed, and finely chop the tomatoes. Crush the garlic cloves with a little salt, mix with the lemon juice and olive oil. Mix everything together. Finally, just before serving, stir in the toasted white bread pieces.
