Ingredients for 1 servings:

  • 2 eggs
  • 35 g flour
  • 35 g protein powder
  • 1 pinch of salt
  • 15 g raw cane sugar
  • 150 g milk
  • 2 g gingerbread spice
  • e.g. vanilla extract
  • n. B. Lemon flavor (lemon paste)
  • possibly sugar for sprinkling
  • butter
  • some gingerbread, crumbled

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Separate the eggs and beat the egg whites until stiff. Whisk the egg yolks with the flour, protein powder, salt, sugar, spices, flavorings, and milk until a smooth batter forms. Then fold in the beaten egg whites. Melt the butter in a pan, reduce the heat, and pour in the batter. Bake with the lid closed until the underside is lightly browned and the surface is bubbling. Using a spatula and, if desired, a plate, turn the batter over, cook briefly, and then tear into pieces. Increase the heat again and bake the mixture completely. Sprinkle with sugar, if desired, and let it caramelize. Sprinkle the Schmarrn with crumbled gingerbread and enjoy with applesauce, if desired.
