Leek and apple salad with cottage cheese

Ingredients for 2 servings:

  • 2 stalk(s) leek, cut into fine rings
  • 2 apples, finely diced
  • 2 cups cottage cheese
  • 200 g walnuts

Instructions

SIS – suitable for dinner

The leek, sliced ​​into rings, is briefly blanched and then mixed with the diced apple. The apple can be diced with or without the skin. The walnuts are roasted in a pan until fragrant. Then they’re just right and can be mixed into the salad. When serving, first place the salad on the plate and then top with the cottage cheese. Serve as a meal in itself or as part of a meal. Tip: If you like, you can use just one tub of cottage cheese for two people and serve the salad with a light balsamic cream dressing or lemon cream dressing instead.
