Leek and apple vegetables

Ingredients for 2 servings:

  • 2 stalk(s) leeks
  • 1 apple
  • 30 g butter
  • 1 tsp, levelled sugar
  • 2 cl sherry or dry white wine
  • 50 ml water or vegetable stock
  • 100 ml cream
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Trim the leek, cut into rings, and wash thoroughly in a sieve. Peel the apple and cut into pieces or wedges. Sauté the leek in half of the butter for about 5 minutes. Remove from the pan. Melt the remaining butter and let the sugar caramelize. Reduce the heat and add the apple pieces, sauté briefly, and then deglaze with sherry or wine and water or stock. Return the leek to the pan and mix everything together. Add the cream and season with salt and pepper to taste. Simmer at low heat for about 5 minutes. Goes well with turkey steaks and rice, for example.
