Leek and cheese soup

Ingredients for 8 servings:

  • 500 g leek, finely chopped
  • 500 g onion(s), diced
  • 500 g minced meat
  • 2 liters of clear broth
  • 2 points processed cheese with herbs (50% dry matter)
  • Thyme
  • oregano
  • rosemary
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Braise the minced meat and onions, add the broth and finely chopped leeks. Season with thyme, oregano, rosemary, pepper, salt, and paprika, and let stand for 2-3 hours. Add the cheese a spoonful at a time before serving. Serve with baguette and garlic butter.
