Ingredients for 4 servings:

  • 1 leek
  • 40 g butter
  • 1 tbsp flour
  • 1 liter vegetable broth
  • 1 pinch of nutmeg
  • salt and pepper
  • a few stalks of parsley

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Trim and wash the leek, cut it into thin strips, and fry it gently in butter. Add the flour and sauté until lightly browned, then add the stock while whisking. Bring to a boil and simmer for 5-10 minutes. Season with salt, pepper, and nutmeg. Stir in the finely chopped parsley before serving.
