Ingredients for 2 servings:
- 4 leeks, cut into 4 cm long pieces
- 40 g clarified butter or margarine
- 1 medium-sized onion(s), diced
- 125 ml water
- Salt
- Nutmeg, freshly grated
- 3 tbsp tomato paste, 3-fold concentrated
- 2 m.-sized gherkins, cut into fine strips
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Heat clarified butter or margarine in a saucepan, add the leek and onion, and stir until golden brown. Pour in the water and season with salt and nutmeg. Add the tomato paste and gherkins, mix, and simmer covered over low heat for 20 minutes. Season to taste.
