A wonderful recipe for cookies if you don’t have eggs or butter at home.
Line one or more baking racks with baking paper and set aside. Preheat the oven to 180°C (top/bottom heat). First, mix the flour with the baking powder, sugar, and vanilla sugar, if desired. Then mix in the mayonnaise with a fork. Knead with your hands until no dry flour remains. Crumble the muesli or chocolate and knead it in. Dried fruit such as cranberries or chocolate drops also work well. If the dough is too wet, place the bowl in the refrigerator until the oven is hot. Then quickly knead in any oil that has escaped. Form the dough into ping-pong ball-sized balls and flatten them between the heels of your hands. Place them on the baking sheet, leaving at least 2 cm between them, and bake for 15-20 minutes until golden brown. Be sure to let the cookies cool on the rack; they will be very soft to begin with! A quick and easy recipe for using up leftover mayonnaise from the day before. And delicious, too! For the best results, however, you should use real mayonnaise with egg. This makes about 16 cookies.
