Lemon balm – sage – jacket potatoes

Ingredients for 4 servings:

  • 8 m.-sized potatoes
  • 16 leaves of sage, fresh leaves
  • 16 leaves lemon balm, fresh leaves
  • olive oil
  • ½ lemon(s)

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Wash and scrub the potatoes. Prick them thoroughly with a fork, ideally all over and deep down. Place each one on a suitably sized piece of aluminum foil and rub each one with olive oil. Halve the lemon and rub the half of it well into the potato. Place two suitably sized leaves of sage and lemon balm on each potato, so that the two identical leaves are facing each other. Then wrap everything in the foil. Preheat oven to 225°C, add the potatoes, and set the fan to 200°C. Bake for one hour. To serve, cut the potatoes in half, including the foil. Serve with guacamole, green salad, butter and salt, cream cheese spread, and much more!
