Ingredients for 1 servings:

  • 4 egg yolks
  • 125 g sugar
  • 3 lemons
  • 1 pinch of salt
  • 80 g butter

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Set up a double boiler and whisk the egg yolks, sugar, zest of 1 lemon, juice of 3 lemons, and salt in a heatproof bowl. Then place the mixture over the boiler. Whisk the mixture until it thickens slightly. Remove the bowl from the boiler and fold in the butter. Pour the mixture into a sealable jar and refrigerate. You can mix lemon curd into frosting, use it as a filling for my lemon cupcakes, or use it as a layered dessert.
