Ingredients for 4 servings:

  • 6 tbsp lemon juice
  • 1 tbsp lemon(s) – zest, finely grated
  • 1 tbsp mustard (Dijon mustard)
  • 1 tbsp sugar
  • 200 ml olive oil (not extra virgin)
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Whisk together the lemon juice, zest, mustard, sugar, salt, and pepper, then slowly add the oil while stirring until the dressing reaches a creamy consistency. Pairs well with shellfish, fish, vegetables, and fine leaf salads.
