Lemon Groats Cream with Dragon Fruit

  • Aranca lemon cream
  • Vanilla pudding powder (Dr. Oetker)
  • Pineapple or lemon yogurt
  • Citronat (Succade)
  • Lemon
  • Pitaya

and now the adult allowance

  • Sour Fritz
  1. Cut the lemon peel into very small cubes and soak in hot rose blossom syrup (in my KB). Make the lemon cream and vanilla pudding according to the instructions. Now let everything rest for at least 6 hours.
  2. Make about 10 grams of zest from the lemon. Then squeeze the lemons and add a little sweetener or liquid sugar. Cut the dragon fruit in the middle and peel it off. Use the bowl for decoration. Divide the dragon pulp first into slices and then into quarters. Cut half into small cubes and place in the squeezed lemon. The pulp is later processed into the cream.
  3. Next, mix the aranca cream, pudding and yoghurt together. Loosely fold in the pickled fruits, lemon zest and lemon peel.

Serving

  1. For the adult version, stir in the sour Fritz at the very end. Fill into glasses and sprinkle with a little sugar, which is then briefly caramelized before serving. Decorate the edge with dragon fruit quarters. Finished
