Ingredients for 4 servings:
- 500 ml lemon juice
- 4 g ginger, grated
- 1 star anise
- 1 pinch of salt
- 500 g gelling sugar (1:1)

My own creation—I look forward to your honest feedback. Serves about 4 glasses of 250 ml each.
Mix all ingredients and bring to a boil according to the instructions on the gelling sugar packet. Remove the star anise and pour the mixture into screw-top jars. It goes wonderfully with sponge cakes or Baumkuchen (tree cakes). I used it as a filling for petit fours and covered them with dark chocolate.
