Ingredients for 1 servings:
- 100 g flour
- 50 g sugar
- 110 g butter, soft
- 140 g sugar
- 2 eggs
- 2 tsp flour
- ¼ tsp baking powder
- 1 lemon(s) (organic)
- powdered sugar if required, for dusting

Lemon Bars – enough for 8 pieces
Preheat the oven to 180°C. Combine all the dough ingredients in a bowl and knead. Press the dough into a prepared square pan (approx. 20 cm x 20 cm). Place in the preheated oven and bake for 15-20 minutes until golden brown. The dough should not brown. For the icing, beat the eggs and sugar until fluffy. Slowly add the flour and baking powder. Grate the zest of one lemon and add it to the pan. Squeeze the lemon and add the juice. If that’s not enough for you, you can use more than one lemon. Pour the filling over the partially baked base. Place back in the preheated oven and bake at 180°C for about 18-20 minutes. Once cooled, simply cut the dough into 8 pieces. If you like, you can dust the slices with powdered sugar.
