Ingredients for 1 servings:
- 140 g flour, whole grain
- 90 g flour (type 405)
- ½ tsp baking powder
- ½ tsp baking soda
- 1 tsp lemon peel, untreated, grated
- 120 g walnuts, chopped
- 1 egg(s)
- 120 g sugar
- 80 g vegetable oil
- 220 g natural yogurt or 110 g natural and 110 g lemon yogurt
- ½ tsp vanilla flavor, liquid
- Grease for the mold or paper baking cups

In a medium bowl, thoroughly mix the dry ingredients (flour, baking powder, baking soda, lemon zest, and nuts). Preheat the oven to 180°C (top/bottom heat). In another large bowl, break the egg and whisk lightly. Then add the sugar, oil, yogurt, and vanilla and mix well. Finally, add the dry ingredients and gently fold in until moistened. Grease the cups of a muffin tin or line them with paper baking cups. Fill the batter 3/4 full. Bake at 180°C on the middle rack for 20-25 minutes.
