Ingredients for 1 servings:

  • 1 m.-large eggplant(s)
  • 120 g cream cheese, grainy
  • 40 g cooked ham, equivalent to about one large slice
  • 30 g gratin cheese, light
  • 1 tsp sesame oil or olive oil
  • ½ small onion(s)
  • Salt
  • Pepper, colored, from the mill
  • Paprika powder
  • chili powder

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Preheat the oven to 200 degrees Celsius (top/bottom heat). Cut the eggplant into eight equal-thickness slices and place them on a baking sheet lined with baking paper. Finely dice the onion and mix with the cream cheese. Season the mixture with salt, pepper, paprika, and chili powder, depending on your preference. Dice the cooked ham. Now drop a small drop of oil onto each eggplant slice and spread it evenly. A small drop in the center is really enough. You can use a teaspoon in total. Then spread some cream cheese mixture onto each piece of eggplant, top with diced ham, and finally sprinkle with the gratin cheese. Bake in the oven for about 20 minutes, until the cheese is nicely melted and lightly browned. Some liquid will ooze from the eggplant slices; this is normal. Note: I have prepared this recipe for one person. I can easily eat all eight pieces for lunch, but this amount is also fine for two people as a snack. One piece has about 40 calories. Tip: This recipe can be varied in terms of ingredients and spices and is also perfect as finger food at a party.
