Ingredients for 4 servings:
- 200 g meat sausage or poultry sausage, cut into short strips
- 100 g cheese (rather soft), cut into short strips, possibly reduced-fat
- 2 small onions, cut into rings
- 2 medium-sized gherkins, not too sour, diced
- 2 medium-sized tomatoes, diced
- 1 tbsp vinegar, fine (e.g. balsamic vinegar bianco)
- 2 tbsp oil, neutral or
- 1 tsp olive oil, possibly more
- 1 tsp mustard, medium hot
- Salt and pepper, white from the mill
- 1 pinch(s) of sugar or
- 1 dashes sweetener, liquid

Whisk the dressing ingredients together in a bowl until smooth. Combine all ingredients in a bowl, cover, and refrigerate for 1-2 hours. Stir occasionally, then season to taste before serving.
