Light spelt bread for the BBA

Ingredients for 1 servings:

  • 415 ml buttermilk, lukewarm
  • 200 g spelt flour (wholemeal)
  • 150 g spelt flour
  • 150 g rye flour (wholemeal)
  • 10 g salt
  • 1 tsp sugar
  • ½ cube of yeast, fresh
  • ½ pack of sourdough (dry)
  • ½ tsp bread spice mix
  • 1 tbsp olive oil
  • 2 tbsp low-fat curd cheese
  • 1 tsp baking soda
  • cornstarch

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 3 hours; Total time approx. 3 hours 10 minutes

Add the quark and olive oil to the lukewarm buttermilk, mix well, and then pour this liquid into the BBA container. Mix the different types of flour with the salt, bread spice, baking soda, and dry sourdough starter. Pour the flour mixture into the liquid and finally crumble the yeast over it. Set the BBA to the basic program (3 hours, speed 2, dark). After the last kneading cycle, remove the hook to avoid large holes. Then mix a little cornstarch with water and brush the dough with it. If you like, you can now sprinkle spelt flour or grains onto the brushed bread. It took me many unsuccessful attempts and mixing several recipes to develop this recipe.
