Lightning Onion Soup
The perfect lightning onion soup recipe with a picture and simple step-by-step instructions.
- 300 g Onions (2 – 3 large onions)
- 50 g Butter (2 – 3 tbsp)
- 1 liter Vegetable broth (4 teaspoons instant)
- 2 Strong pinches of salt
- 2 Strong pinches of pepper
- 1 Strong pinch of nutmeg
- 50 g Grated Emmental
- Possibly baguette or rolls
- Peel and quarter the onions and cut into wedges. Heat the butter in a pan or saucepan and fry the onion wedges vigorously / stir-fry. Deglaze / pour in the vegetable stock and simmer for about 5 minutes. Season with salt (2 big pinches), pepper (2 big pinches) and nutmeg (12 big pinches). When serving, sprinkle the plates with grated Emmental. Serve with a baguette or bread roll.
