Lime Cream with Mint Sugar

Ingredients
 

  • 4 stems Mint
  • 4 heaped tbsp Sugar
  • 1 Organic lime
  • 250 g Low fat quark
  • 250 g Sour cream or creme fraiche
  • 1 packet Vanilla sugar
  • 16 Vanilla crescents

Instructions
 

  • Wash the mint and put some of it aside for the garnish. Pluck off the remaining leaves and crush them with 1-2 tablespoons of sugar in a mortar. Wash the lime with hot water, pat dry and rub the peel. Halve and squeeze out the juice.
  • Mix the quark with sour cream, vanilla sugar, lime juice and zest until smooth. Season the mixture with 2-3 tablespoons of sugar.
  • Pour the lime cream into small glasses, except for about 4 teaspoons. Halve or third each of 3 vanilla crescents and place on top, sprinkle with mint sugar. Sprinkle the rest of the cream on top and serve garnished with the rest of the croissants and mint.
  • Tip 4: Orange biscuits can also be used instead of the vanilla biscuits. Then put 4 orange biscuits on each, sprinkle with mint sugar and put 1 orange biscuit on top.
