Ingredients for 4 servings:
- 500 g pasta (linguine or capellini)
- salt water
- 80 g butter
- 100 g almond(s), coarsely chopped
- 70 g raisins
- 40 g pine nuts or pistachios
- 60 g Parmesan, grated, more if desired
- 1 orange(s), untreated, zest
- possibly parsley or basil
- Pepper from the mill

fast, sophisticated and classy
In a large skillet (the linguine will be added later), heat the butter over medium heat until it begins to foam and brown. Turn off the heat. Add the chopped almonds, raisins, and pine nuts or pistachios and stir. Set aside. Cook the linguine in a large pot of salted water according to the package instructions. Add the cooked linguine and grated Parmesan to the still-hot skillet and stir well. Serve immediately and garnish with freshly (!) grated orange zest and pepper. If you like, you can also sprinkle with finely chopped parsley or thinly sliced basil. You can also swap some of the raisins for dried figs or apricots, depending on what you have on hand. This also tastes delicious.
