Ingredients for 1 servings:

  • 4 egg yolks from hard-boiled eggs, strained through a sieve
  • 80 g powdered sugar
  • 1 vanilla pod(s), scraped pulp
  • 200 g butter
  • 300 g flour
  • 100 g almonds, peeled and medium-finely chopped
  • 2 egg whites, raw
  • ½ jar jelly (currant jelly)
  • powdered sugar

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

very fruity cookies due to the filling with currant jelly

Knead the dough ingredients into a ball, shape it into a ball, and wrap it in cling film. Let it rest for at least 30 minutes. After the resting time, roll out the dough thinly and cut out circles. Cut a hole in half of the cookies. Bake for 10 minutes at 200°C until light golden. Spread a little jelly on each cookie without a hole and place a cookie with a hole on top. Dust the cookies with powdered sugar.
