Ingredients for 1 servings:

  • 100 g butter, soft
  • 100 g sugar
  • 2 packets of vanilla sugar
  • 1 pinch of salt
  • 2 eggs
  • 1 pack of pudding powder, vanilla
  • 3 tbsp milk
  • 200 g flour
  • 50 g cornstarch
  • 3 tsp baking powder
  • Fat, for the tray
  • 200 g powdered sugar
  • 1 tbsp lemon juice

Cream the butter with sugar, vanilla sugar and salt until light and fluffy. Gradually add the eggs. Whisk the custard powder with the milk and mix in. Sift the flour with the cornstarch and baking powder over the mixture and mix it in as quickly as possible. You want a firm dough. Using two tablespoons, which are repeatedly dipped in water, scoop out not too large heaps of dough and place them on the greased baking tray, leaving enough space between them. Bake the American cookies on the middle shelf of an oven preheated to 200 degrees Celsius (gas mark 3) for 15-20 minutes until golden brown and allow to cool on a wire rack. Mix the icing sugar with lemon juice and a little hot water to form a thick glaze and spread it on the underside of the cookies. Allow the glaze to dry completely before layering the cookies in a tin.
