Low-carb minced meat and vegetable casserole

Ingredients for 5 servings:

  • 500 g minced pork
  • 1 onion(s), red
  • 1 bell pepper(s)
  • 2 small zucchini
  • 2 carrots
  • 5 eggs
  • 450 ml milk
  • 250 g Gouda, grated
  • e.g. salt and pepper
  • marjoram
  • basil
  • Spice mix for minced meat
  • olive oil
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Dice the bell peppers, zucchini, onion, and carrots. Mix the minced meat with the onions and season with salt, pepper, and the minced meat seasoning. Heat a little olive oil in a pan and fry the minced meat until crumbly. Place the diced vegetables in a greased baking dish and mix with the minced meat, ensuring everything is evenly distributed. Mix the milk with the eggs and season with salt, pepper, marjoram, and basil to taste. Add the egg-milk mixture to the baking dish and stir again. Finally, spread the Gouda cheese over the entire mixture. Bake at 200 degrees Celsius (top/bottom heat) for 25 to 30 minutes. A fresh salad also goes well with this dish.
