Low-carb vegetable casserole

Ingredients for 4 servings:

  • 1 zucchini
  • 3 carrots
  • ½ kohlrabi
  • 250 g minced meat
  • 1 small onion(s)
  • 1 clove(s) garlic
  • 500 g tomatoes, pureed
  • 3 tbsp cream cheese
  • 150 g Emmental cheese, grated

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Peel the onion and finely chop. Peel and press the garlic. Cook both ingredients in the pan with the minced meat. Add the passata and simmer. Stir in the cream cheese. Trim the zucchini, carrots, and kohlrabi and slice them into thin strips (using a julienne cutter). Place everything in a baking dish. Add the sauce and mix everything together. Finally, sprinkle with cheese. Bake in a preheated oven at 180°C for about 15 minutes, until the cheese is golden brown.
