Ingredients for 1 servings:
- 85 g almond flour
- 25 g protein powder (vanilla flavor)
- 50 g quark
- 60 g xylitol (sugar substitute) or other sugar substitute
- 3 m.-sized eggs
- 1 tsp baking powder
- 100 ml milk, possibly lactose-free or plant milk
- 90 g butter
- 100 ml carbonated mineral water
- 1 tsp guar gum or locust bean gum
- 1 pinch of salt
- 4 drops of vanilla flavor
- some lemon zest
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Preheat the oven to 220°C (top/bottom heat). Mix all ingredients thoroughly until you have a thick, smooth batter without lumps. I use two silicone waffle pans, which makes a total of 8 waffles. Place the pans on a baking sheet, fill them, and bake the waffles for 15 minutes at 220°C (425°F). Then carefully remove the waffles from the pans onto the baking sheet and bake for another 5 minutes.
