Ingredients for 4 servings:
- 500 g potatoes
- 2 thick gherkins
- 50 ml cucumber juice
- 1 m.-sized onion(s)
- 2 m.-sized carrot(s)
- salt and pepper

Boil the potatoes in their skins. Meanwhile, dice the gherkins. Dice or coarsely grate the carrots and finely chop the onions. Peel the potatoes and cut them into wafer-thin slices while still warm. Mix with the onions, carrots, and gherkins. Heat briefly in a saucepan on the stovetop, if desired. Add the gherkin juice to taste. Season with salt and pepper and serve while still warm. Great as a side dish for barbecues; the portion size is reduced if it is only used as a side dish. Approx. 130 kcal per serving.
