Macaroni salad

Ingredients for 14 servings:

  • 750 g pasta (maccheroni)
  • 350 g cherry tomatoes
  • 350 g gherkins
  • 350 g salami (Cervelat or noble salami)
  • 1 bunch of parsley
  • 120 ml rapeseed oil
  • 80 ml balsamic vinegar, white
  • 120 ml cucumber juice
  • 120 ml broth
  • 1 tbsp mustard, medium hot or sweeter
  • 1 tsp, heaped paprika powder
  • salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 8 minutes; Total time approx. 12 hours 38 minutes

Cook the macaroni until al dente and let cool. Dice the gherkins and tomatoes. Finely chop the parsley, including the stems. Cut the salami into thin strips. Make a dressing with the oil, vinegar, pickle juice, paprika, salt, pepper, and mustard. Whisk until smooth. Then combine all ingredients in a large bowl. Pour the dressing over the top, then add the broth and parsley. Mix everything thoroughly and let it sit overnight.
