Macaroni with tomato sauce and hunting sausage

Ingredients for 5 servings:

  • 500 g macaroni or other pasta
  • 400 g hunting sausage
  • 1 onion(s)
  • margarine
  • some flour
  • 1 ½ liters vegetable broth
  • ½ bottle of ketchup (Werder)
  • ½ tube(s) Tomato paste, approx.
  • 1 tsp, heaped sugar
  • 1 dashes lemon juice
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

The best tomato sauce, original according to mom’s GDR recipe

Cut the sausage into small pieces and fry in a little margarine. Add the onions, sauté until translucent, and set aside. Meanwhile, cook the pasta. Melt 2 heaped tablespoons of margarine in a saucepan, vigorously stir in 2 tablespoons of flour to form a smooth roux. Then whisk in 2/3 of the broth until almost the desired consistency is reached. Stir in the ketchup and tomato paste. Add a little more broth if needed. Season to taste with salt, pepper, sugar, and lemon juice. Finally, add the sausage and onions and bring back to a boil. Serve with the macaroni. I thank my mom for this childhood memory and for the delicious recipe.
