Vegan gnocchi – ingredients and preparation

For the vegan version of this delicious dish, you need 500 g potatoes, 125 g wheat flour or spelled flour, 25 g potato flour, 1/2 teaspoon salt, and a pinch of nutmeg.

  1. First, put the potatoes in a saucepan with salted water and let them cook for about 20 minutes until they are tender.
  2. Then take the potatoes out of the pot and peel them. Then mash them with a potato masher and let them cool slightly.
  3. Then add the flour, salt, and nutmeg to the cooled potato mixture and mix well.
  4. Then add the potato flour in small portions to the dough and mix it well with the mixture.
  5. Divide the dough in half and roll each into rolls about 2 centimeters thick. You now have to cut these into many 2-centimeter pieces.
  6. To form the gnocchi, you must first form these pieces into a ball and then place them in some flour. Then press the balls lightly with a fork.
  7. Now put water in a pot and salt it. When the water is boiling, you can add the gnocchi. As soon as the gnocchi float to the surface, they are ready and can be removed with a slotted spoon.

Vegan cream sauce with mushrooms

You can also prepare a delicious sauce to go with the gnocchi. For this recipe you need 600 g brown mushrooms, 100 ml white wine, 200 ml soy milk, 300 ml vegetable stock, 2 onions, 2 tsp black pepper, 4 tbsp soy yogurt, 1/2 bunch parsley, 2 tbsp flour, 2 tsp salt, 1 pinch nutmeg, and olive oil.

  1. First, peel the onions and cut them into small cubes.
  2. Now put some olive oil in a saucepan and add the diced onions. Let them steam for about 5 minutes and then add some salt.
  3. Then add the clean mushrooms and let them simmer for 5 minutes.
  4. Then add the flour as well and stir the mixture for about 1 minute before deglazing with the white wine and vegetable broth.
  5. Also, add the soy milk and season with pepper and nutmeg before putting the lid on the pot and simmering for 15 minutes.
  6. After the 15 minutes, you can add the soy yogurt and the finished gnocchi and let everything simmer for another 2 minutes before serving with the chopped parsley.
