Ingredients for 1 servings:

  • 5 lemons, including the peel
  • 500 ml alcohol, 96%
  • 500 ml water
  • 200 g sugar

Instructions

Working time approx. 15 minutes; Rest period approx. 21 days; Cooking/baking time approx. 5 minutes; Total time approx. 21 days 20 minutes

First, peel the lemons with a vegetable peeler and place the zest into a flip-top jar. Then, add the zest to the alcohol and place it in a sunny spot for three weeks. Stir once a day. After three weeks, first boil the sugar syrup from the water and sugar, then let it cool in the refrigerator. Then, filter the lemon alcohol through a tea strainer and top up with the cold sugar syrup. Note: The typical cloudiness of lemon juice is caused by the sugar syrup; this is called the louche effect.
