Quince vodka liqueur

Ingredients for 1 servings:

  • 5 large quinces
  • 500 g sugar
  • 1 liter of vodka
  • 100 ml water

Instructions

Working time approx. 30 minutes; Rest time approx. 13 hours; Cooking/baking time approx. 5 minutes; Total time approx. 13 hours 35 minutes

Wash and peel the quinces, then cleanly grate the cores. Add 250g of sugar and 100ml of water and let stand overnight, or for about 12 hours, until the juice has formed. Line a large sieve with a cheesecloth or kitchen towel, add the quinces, and collect the juice. Let stand for about an hour. Squeeze the quinces firmly with the towel. Bring 250ml of water, sugar, and quince juice to a boil in a large saucepan, remove from the heat, and let cool. Mix the quince juice with the vodka and carefully pour through a coffee filter. Pour into sterile bottles and seal. Makes approximately 1.5 liters.
