Ingredients for 4 servings:
- 4 artichokes
- 6 garlic cloves
- 1 bunch of parsley
- 8 olives
- 2 tbsp capers
- 90 g breadcrumbs
- 1 tbsp vinegar
- 1 tbsp oil

Qaqocc Mimli
Pound the artichokes vigorously on a tabletop and then soak them in salted water for about half an hour. Meanwhile, finely chop the garlic cloves, parsley, olives, and capers and mix with the breadcrumbs, vinegar, and oil. Open the artichoke leaves and stuff them with the mixture. Place them tightly together in a pot and add up to 5cm of water (depending on the size of the artichokes). Simmer over low heat until the artichoke base is tender and cooked through.
