Ingredients for 4 servings:
- 250 g cream
- 3 tbsp crème fraîche
- 6 cl liqueur (limoncello)
- 1 lemon(s), zest
- 2 egg whites
- 80 g sugar
Instructions
Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes
Whip the cream stiffly and combine with the crème fraîche, limoncello, and lemon zest. Whip 2 egg whites with sugar until very stiff. Fold the egg whites into the cream mixture. Pour into a bowl or parfait mold and freeze for at least 2 hours. If desired, you can remove the parfait from the freezer about 20 minutes before serving so it melts slightly and becomes a bit creamier.
